Cooking For Leftovers

My favorite part of cooking is knowing that they’ll be left overs. Some may say, “Well, just cook enough, and there won’t be.” or “Gross! I never eat left overs.” but I do it purposely..and no it’s not gross. Cooking these days, is tough, especially if you’re short on time, and who isn’t. Left overs don’t only save you time, but they also save you money. By eating left overs you save money by not going out for lunch, or buying extra groceries for dinner. Now, don’t get me wrong, by all means I’m not saying make a lot of one thing and eat just that the next day or the following (which isn’t a bad thing all the time), what i’m saying is have fun with it. Instead of just reheating it, make a new dish, repurpose it, save time, and have fun! For example, if you made beans the night before, you can mash them up, add a couple of ingredients, and now you have a bean dip to snack on. This can be done with just about any food, all you need is some creativity.

For those that lift their noses to left overs, I feel bad for you come Thanksgiving, while everyone is eating home made turkey sandwiches the next day and you’re really wishing your were too. Who’s nose will be turned up then. In fact, there are several dishes that were created due to having left overs: refried beans, sandwiches, shepard’s pie, scrapple, name a few.

So the next time you make dinner, make a little extra, and see how you can turn it into something new and interesting, or just eat it as is, because it’s so good, you want some more.

    I love leftovers and am trying to do a better job of having them for hectic days/nights in NYC. Cooking at home isn’t as easy here! It’s good to read your thoughts. Happy blogging.

      I do too! And i know exactly what you mean. I have decided that apartments weren’t made to cook in, in NYC. So when you do, do it, you may as well make the most out of it. Thank you very much for the comment!
